Base GT test drive not impressive. What am I missing

It's my understanding that the Base "Sport" mode only affects nannies. No throttle response parameters are affected whatsoever. Believe me, I have a Base GT and always felt like I was pulling an anchor and added Pedalmax which helped some.
I eventually upgraded to a Sync 3 unit and had the premium modes programmed. So much better now. I might just remove the Pedalmax at this point.
So yes, OP, I would definitely try a Prem with Sport or track mode enabled and traction control off. Makes a world of difference.
Why didn't you just get a Lund or Bama tune, rather than mess with a Pedalmax or the Sync system?

You don't really have to push the stock internals to get good numbers out of the ecoboost. Get a vargas stage 2 with intercooler and accessport (around 3.000$) and you can get to ~360/370whp roughly on 93 on a safe tune without having to upgrade internals. That's around as much as the GT does top end. But you will have tons more of torque down low and in the middle of the rpms. You are also lighter. The car will be very quick with those mods. And the number of big turbo ecoboosts that have failed so far is close to zero since the vargas turbo can make good power with a lot less stress than the stock turbo.
Are we not comparing Stock GT to Stock EB?
If we are talking about mods & upgrades.. doesn't GT have higher ceiling?
For $3k you can buy a Ford Performance Supercharger for Coyote and do the install your self. Never have to worry about losing to a EB.

One reason was warranty and was planning on going with the PP2 but all the pinging issues etc gave me pause. Two, I was upgrading to a Sync 3 unit regardless because I hated that little screen and dial pad. I also wanted Apple Carplay so I was going to end up with the Premium bezel/toggles regardless. But yes, a tune is also a great option.

I am not comparing at all. Just want to give OP a way to achieve his torque/power desires with the car he already has

My plan is to compare stock to stock. I would like to have a warranty at least during the payment period. I had originally thought about a tune and even the Ford tune to probably give me pretty much the performance I wanted on the ecoboost. I'm at 31000 miles so my CPO warranty could very well be in jepordy in about 5000 miles. If the motor lets go, the cost to repair would be significantly close to amount it takes to get into a GT. I had always figured I wanted a GT. I just couldn't swing it. Now since I have sold my motorcycles I am pretty close to the amount needed for a GT. I just originally figured the GT would be more power everywhere at all times then the stock Ecoboost and I would not miss a single thing about the eco. Have a nice Stock GT with more power then I really need and have fun tinkering with this and that over the years with maybe 5 years or so tune it up a bit. So yes, The warranty is a concern at this point.

Same impression from me but the other way around. When testing both models the ecoboost felt sluggish and slow.

Sluggish and slow are relative words. A GT would feel sluggish and slow if you tested it against a GT350. Tell me I'm wrong?

Actually I wonder and probably will only ever wonder but the gt350 might feel sluggish in the lower RPMs. From what it looks like and have heard the torque is lower then the GT below 3000. I think its safe to say I will probably never get to feel the difference though.
The first ecoboost brand new one that I test drove I thought was a bit sluggish also. I then bought this used one. I wonder if the new one didn't have 93 octane and my used one did. These ecoboost unfortunately are very octane dependent for performance.
