Good luck OP this really sucks.

This scares me, to avoid this maybe I'll try:

1) tell them to not test drive and that you have a tracker on the car
2) Place a dash cam and put a visible note
3) Put it in valet mode?

Valet mode does nothing, especially if the problem is a hack driver can't drive a manual.
You need a valet tune... specifically limiting throttle, and rpm.

best thing to do is be there while whomever is working on it if you're not going to take it to a reputable mustang only or shop that deals with sports cars or high end cars.

to be fair it does not look like he was "beating" on the car.
Just not a good enough driver to be "test driving" a manual car.
He needs some practice, nonetheless the damage was done in a few miles.

I always test drove any car I worked on. If something wasn't right I wanted to catch and fix it before giving it back to the owner.

For alignments it was to make sure the car tracked correctly and the wheel was centered. I never once beat on anyone's car and if the owner wanted to ride with I always said yes.

I've given my wife a few lessons driving stick in my Mustang, maybe 2 or 3 tops, and all she has done is 1st and 2nd gear.. but im confident she can drive better than that knucklehead. Jeez that was a lot of clutch slip lol.

At least this is a chain with corporate oversight.. i see a new clutch in your future

My dad nearly did that to my car right after I had out a new clutch in like 1 week before. He was following me back from a toyota dealership 2 miles away and I guess he has forgotten entirely how to drive stick.

He rode the clutch the entire 2 miles at like 5-10 mph. Smelled like clutch for more than a week but we didnt have to replace it entirely.
