Considering an open trailer for my S550. It would be pretty much dedicated for this car or similar size so not looking for a huge heavy car hauler that could haul a 1 ton truck. Tow vehicle is a Suburban. Suggestions on specs and brands? Thanks.

Big Tex CH-70-18 works great for me! Added the winch & tool box, bought 7' loading ramps as my car is lowered.

Get an aluminum trailer that can fit most cars .
So when you move on to another car. Or need to sell the trailer you have a bigger pool of buyers.
They’re proud of the aluminum ones that’s for sure.

Are there trailers where the trailer fenders sit lower than the doors of a car?

I mean sure, if one has a winch kit, they can offload the vehicle easily enough, but unless you’re a toothpick or a Duke Boy, I can’t see how some folks can get into the vehicle on a trailer like the above image.

Fenders are held on with two bolts, takes maybe 30 seconds to remove it. Door swings open with a lot o' room to spare once the fender is removed.

That's why - when you look for a trailer - you look for one with removable fenders - like CH70 from Big Tex - this was the cheapest trailer in early 2021 in my area and I have one too - over 10k miles on it and so far nothing to complain about. Paid $3200 with spare tire, brakes on both axles, recently same vendor had them for $5k.

For a lowered car you also need to consider ramp angle (and usually get something like Race Ramps) to be able to get it on the trailer without rubbing.

Any trailer will really work for Mustang - just need to be long enough.

Would be worthwhile to search for an excellent used trailer since prices have increased substantially. My Hallmark 20ft enclosed trailer is worth more than I paid for it, new.
Thankfully I have no interest in selling it.

A while ago I rented a U-Haul car transporter, the fender was on a pivot and held in place by a rubber latch. All I had to do to get in my car was remove the latch and the fender folded down out of the way, took all of 5 seconds. I thought it was a pretty slick idea. I'm sure other trailers have similar solutions for this issue, at least if they're built as car haulers they should.

Removable/ unbolt fenders-really? Look around my 18foot no name 7K trailer works great and even the Mustang doors clear the fenders, don't set your self up for a lifetime PITA!

I have a PJ hydraulic tilting trailer, no more ramps to deal with and the fenders are removable.

I went with a dual 5k lb axle trailer so I could use it for multiple things. My first open trailer had 3500 lb axles and I found the limit of the trailer quicker then I thought I would.

Agreed - it's a terrible inconvenience to bolt/unbolt one fender & remove it! And then the struggle to put it back on is a PITA beyond comprehension - a lifetime of sorrows indeed!

Trailer prices are way down, even on aluminum ones. Here is the Aluma 18' "Executive" I picked up. It was 4k cheaper than the same time last year. Tows great, never know it's back there, tilts part way down, then has ~5' ramps. Splitter does not touch ramps, even with the FP springs. This is the best photo I have.

If I park the car as I have in the photo, I can still open the drivers door just enough to climb out without removing the fender. I can remove the fender in 30 seconds.

Steel trailers are cheaper and can haul more, but for my $, it felt like the aluminum was the way to go, and this trailer is ~1,600 lbs, and has dual 5300 lb. axles, and is rated to the max 9k payload, so you could technically haul a 1 ton if you really wanted to...but I wouldn't.
