I've run both the sofa seats and Recaros with harnesses, and found that with either type of seat you can be held firmly in place using a 4 point harness like the Schroth. I'm 6'4" 200 lbs, and it's a tight and uncomfortable fit in Recaros, but I still found that the harness needed to be really tight to hold me in place.
So for me I stick with the sofa seats because I find them more comfortable for normal street driving. I swap my roll bar in and out of my car for track driving. It's really annoying doing that extra work, but I don't think it's safe to drive with a roll bar in the car unless you have a helmet on. So I limit my driving with the roll bar as much as possible. Mostly to and from the track.
Edit: one other thing to watch out for is that the Schroth harnesses are only approved for certain seats. Just because it's a racey looking seat doesn't necessarily make it safe.
