I've run both the sofa seats and Recaros with harnesses, and found that with either type of seat you can be held firmly in place using a 4 point harness like the Schroth. I'm 6'4" 200 lbs, and it's a tight and uncomfortable fit in Recaros, but I still found that the harness needed to be really tight to hold me in place.

So for me I stick with the sofa seats because I find them more comfortable for normal street driving. I swap my roll bar in and out of my car for track driving. It's really annoying doing that extra work, but I don't think it's safe to drive with a roll bar in the car unless you have a helmet on. So I limit my driving with the roll bar as much as possible. Mostly to and from the track.

Edit: one other thing to watch out for is that the Schroth harnesses are only approved for certain seats. Just because it's a racey looking seat doesn't necessarily make it safe.

NJMP's official reply was that a 4 point harness is allowed but must be FIA certified and attached to a roll bar.

New five year goal: build the stang and ship it for a Nuremberg Ring run when I get better at track.

You will need a harness bar for the Schroth harnesses (stock seats? 4-point ASM is very good).

Otherwise, if you have racing seats, go with the 6-point harnesses.

This is a weird website, but I have 3 of these buckles in a row on my factory 3 point seatbelt and use them to make sure the lap section stays tight and holds me in the seat:

Mine came from Amazon.

In general, you should be using your left leg on the dead pedal to push your body into the seat whenever you face a bracing issue. While tiring, it should be possible to survive that way at least until you get a cramp.

If you use a Schroth Quick Fit you will not need any of this. I ran this belt in my very early days and set it up like like diagram provided by schroth.
