Don't stone me for asking this, but i'm curious if it's technically possible.
Theoretically with the whole engine + transmission, driveshaft + odometer it should be doable.

I always tell my customers, anything is possible given enough time and money. That doesn't mean it makes sense to do it though.

I'm located in Austria, GT500s are out of the question. I saw one for 260k Euro 290k Dollars a year ago. Engine Tax here is ungodly. Even if you wouldn't care there haven't been any on the market for a year and as far as i know it's not possible to register new ones from import.

I also need to modify the car in a way that it looks somewhat stock, that it can still pass technical inspection. Every modification here would need eu documents and a bunch of other stuff.

The only thing working in my favor is that my car is unkown here. So most modifications are going under the radar.

You don't have to use the GT500 setup, there are PLENTY of options for the kind of money you're about to spend. And yea it's doable.

At first this sounded feasible to me, buy one of those take-out powertrain pallets with both engine and trans controllers/harnesses. But I think cost will runaway once you start trying to integrate it with the existing gt350 electrical and CAN architecture.

These hurdles come to mind:
  • Rotary PRNDL shifter and harness needed, and subsequent electrical rework
  • Instrument panel from gt500 may not be needed, could probably settle for any S550 TFT display cluster
  • Body harness from gt500 needed for required connections from trans harness to CAN, paddle shifters, PRNDL.
  • Rest of modules in vehicle are likely operating on an older variant of CAN architecture/signaling. This might be less of an issue on a 2019 or 2020 gt350 given the two-ish year overlap with gt500
  • Unknown amount of CAN module settings reconfiguration
If you were in the US, it would be a foregone conclusion at this point to just buy a gt500 or at minimum a donor with intact powertrain. Given your comments on importation practicality, I think your best option might be to go with a European DCT with far superior aftermarket support like the BMW 7-speed since you can readily source standalone controllers for those. This might actually work pretty well on an originally manual trans application since the gt350 PCM is already configured to run without any input from the trans other than output shaft speed which can be easily acquired from the trans electrical.

Wow, that trans is inexpensive. Wonder how hard it is to find a controller.

Mating the Predator engine to your 6 speed would be a much simpler solution. Integrating the DCT into the system is going to require significantly more work both in the engine bay and in the interior.

Slap a supercharger on the engine and go with a sequential shifted transmission if you want that kinda fun for a helluva lot less than trying the 500 swap.
