I'm sure Ford has power targets that can be reached with a FI V8 and maybe also with a FI V6. However, there are also subjective aspects that should be considered, such as sound smoothness of the power delivery, off-boost performance, heritage, etc.
IMO, the GT500 will have some type of V8 due primarily to those reasons. I also think the power targets (mid-700's to pass the hellcat) will make a boosted V6 require large turbos and high boost. This will make the car feel laggy and unrefined. Instead a larger displacement V8 will be used with lower boost.
