Does anyone know if there's a difference with things like how the car processes sleep state? Obviously I'm not worried about someone rifling through the car in my garage, but since it's sitting for 5 months I'm curious as to what's better, or at least what everyone else does. Locked seems like it would go to "sleep" faster, but maybe not because typically people don't lock their car at home?

I don't think it matters. Indeed, it might go to sleep a bit faster when locked, but "faster" is likely just a matter of minutes. Perhaps two to five minutes instead of twenty or so. Besides, if you store it for five months then you'll probably have the battery on a trickle charger anyway, which would make the sleep timeout irrelevant.
Whether locked or not, it will go to deep sleep after two weeks.

I THINK (not sure) there are 2 sleep modes, deep sleep, no trickle charger.

With charger, network turning off to save battery. Displayed ruffly 1 week, first scenario, appearing 2-3 weeks .

Lock/unlocked no consistent pattern.

Mine is on a battery maintainer, windows up and unlocked, stored since November 1st. This screenshot is what FordPass showed 3 weeks after that date.

Battery tender and unlocked for me. PITA to hunt for the key if I am in the shop and want something in the car.

I always lock mine when stored in the garage but that's just force of habit pushing the button on the remote.

Battery tender, unlocked with hood popped and only soft closed

Windows are opened an inch for ventilation and then Covercraft cover
Stored in heated garage at 68⁰F

Was put away October 25th and will probably see daylight again in late March

EDIT: I forgot to add that I put stabilizer in the fuel tank and fill up before storage.

I'd be leary storing it locked. If the battery were to die it would be a real pita to gain access.

There is a manual access to a door, lock, user manual, reading required.

I store mine unlocked and covered in my garage. With the hood closed but unlatched so that I can plug/unplug charger. I’ll often leave the windows cracked a little too so air can flow.

Yes, I know, I've used it before.
Doesn't negate it being a pita.
Mine felt like the key was going to twist off...

What I imagine would be a PITA is forcing the window to break free from the rubber seal, and then not being able to close the door again until the battery is recharged. But this will happen regardless of whether the doors were previously locked or not.

With so many cars being stolen from dealerships....I locked mine...though it is only being stored in the garage for the three weeks while I am away. If I was home, then it would be unlocked. There are thieves that have those gadgets that steal garage door opener codes. With that having been said, I have two of the newer type openers that should prevent that happening.
