Is it necessary to set this each time you may find yourself in a competitive situation or can you simply leave it on?

Just leave it on. I notice on mine it doesn't "activate" until the engine warms up.

still haven't even used mine yet...feeling kind of guilty about it. This looks like our last 50 degree+ week here in Michigan. Maybe I'll find a nice road in "mexico" tonight lol

I'm not very impressed with it. I think I can launch it faster manually than I can with LC on.

It seems less like LC and more like a rev limiter and a clutch drop with traction control on.

Do you have to press the brake fully before it will activate (manual Mustangs)?

no, if i recall correctly you go in the settings to turn it on and you set the RPM's.

When you're in 1st with clutch pressed it and you hold the gas it will hold to the RPM's you specified in the setup. Then you drop the clutch and it goes

You can leave TC on all the time, there's no reason to go in and keep turning it on or off

I'm assuming hill start assist will hold it while you launch if on an incline?

You won't do well. Generally the minimum is too high of a launch rpm for street tires and the max is too low for radials. I tried it a few times and gave up; you'll have much better success launching the old fashioned way.

No you do not have to press the brake pedal or anything to get it to activate. You just need to be stopped. As long as LC is shown in your display in the dash it is ready. The trick is you can't slowly press the gas pedal and bring up the RPMs slowly to whatever you set it at. If you do the LC will not catch it and it will rev out and hit the limiter. You have to pretty much just rely that it is going to work and press the gas pedal to the floor and the launch control should catch the rpms and stop them at what you set it too.
