There is Pietz in Tomball. They are actually in the back of my neighborhood. I've heard good and bad about them, might give them a call. There is also Serious HP which I've only heard a little about, but all positive.
Other than that, you might reach out to @honeybadger because I think he has someone in the Austin area. For what you are looking to do, it's definitely a quality over cost type of deal IMO, and I'd trailer my car to find quality over convenience.

Was your plans to rebuild the GT350 and then flip it to make some $$$?Ouch…. Well I gave the green light. Gonna be upside down on this build but f it. Every project I’ve ever done, new or classic muscle is like this. Just gotta enjoy the ride.
