I have the upgraded Ford oil filter. The 05w-20 Motorcraft oil was sitting on the shelf. Just wanted some opinions on whether or not it should be used. I do know that Ford has changed their recommendation since 2019.
Yep, ford changed their recommendation but the engine hasn't changed as far as I know.

If you go hard on the car then do 5w-30. If you drive it mostly like a daily then you can use your 5w-20 and just get 5w-30 next time. All up to you but the car isn't going to break if you use the 5w-20.

Getting ready to do the first oil change on a 2021 5.0 GT. I have 10 quarts of Motorcraft 5w-20 full synthetic. Ford recommends 5W-30 synthetic blend. The car is never driven in cold weather.
If I go with the 5W-20 full synthetic I will stay with full synthetic. Any thoughts?
Should be fine, but I wouldn't track the car. If I remember, the 2020's called for 5W20 and if tracked 5W/30. I can't remember as I have used 5W30 from my first oil change at 1K miles.

FWIW, 2 years is an aweful long time for an OCI. I'll assume low miles? "Conventional" wisdom is at least an annual change if you are not hitting mileage annually.

My oil cap states 5w-30w. I would use that.

The engines have changed
GDI vs. Traditional port injection.
GDI fuel dilution over the recommendation OCI = 10 Qt sump & 30 end weight oil.

My 19 calls for 5w-20 so the spec changed after then.

That’s what I’m going to use. I just purchased 5W-30 Motorcraft oil.
My 2020 manual specifies 5w20, but if you track the car, they recommend changing the oil to 5w30 along with the filter, then when you're done racing for the day, to switch back to 5w20 and new filter. So, it's like they're saying either is fine for the engine and I suspect the only reason for going back to 5w20 after racing is to restore your fuel economy. I'm sure the 5w30 results with a little lower mpg than the 5w20 especially if you're taking long freeway drives vs. stop and go city driving. While Ford requires a yearly oil change at minimum (regardless what oil life, etc. says) I had an oil analysis done and was told the oil wasn't even at it's half-life. So once my warranty is over, I plan to use the oil life and mileage as a determining factor (along with my oil analysis report that I'll do each time).

Can I use this oil filter, CM-6731-FL820, on a 21 GT?

Actually you are going to want 10.5qts of 5w30. I just did the first change on my wife’s 2022 GT convertible. The OE Ford oil filter is a little smaller than the FL-500S oil filter plus I let the oil pan drain forever.
10qts will put you right at the BOTTOM safe range.

FYI that Ford changed the spec (2021 MY I believe) to 5W30 from 5W20.

Thanks. I let it drain about 6 hours. I even lowered the car to the floor to get the last few drops out.
I like the way you think. 45mins got everything out to a drop for me. I made sure the car sat for 5 days so there wasn’t any oil in the engine, then I pushed it out the the garage door.

Notice the bathtub-sized drain tub in @Germansheperd 's post. If this is your initial change with the car, highly recommended something of this type. 10 quarts is a lot. It exists the engine rather quickly, initially almost straight out towards the back.
A LOT comes out and FAST! I kept the drain plug handy when the bathtub drain was filling up just to push into the oil pan to give the drain pan a minute to go down.
