I was very adept at heel/toe in my 2006 GT, but when I got my 2016 GT/PP, I couldn't reach the accelerator. I bought the Steeda heel/toe pedal, but never installed it, as the issue wasn't the lateral spacing, but the relative height of the pedals.
As noted above, the Brembo cars have very little brake travel. I solved the issue by installing the spacers that @2018OFPP1?2 linked above, and swapped out the stock pads for Power Stop Z23s. Initial bite isn't quite as hard, and they give more travel, so it resolves the issue of brake pedal to accelerator orientation, plus reduces dust, while at the same time, providing comparable overall braking performance.
