I was very adept at heel/toe in my 2006 GT, but when I got my 2016 GT/PP, I couldn't reach the accelerator. I bought the Steeda heel/toe pedal, but never installed it, as the issue wasn't the lateral spacing, but the relative height of the pedals.

As noted above, the Brembo cars have very little brake travel. I solved the issue by installing the spacers that @2018OFPP1?2 linked above, and swapped out the stock pads for Power Stop Z23s. Initial bite isn't quite as hard, and they give more travel, so it resolves the issue of brake pedal to accelerator orientation, plus reduces dust, while at the same time, providing comparable overall braking performance.

Its def easier under heavy braking. Track mode helps as well.

The Steeda heel-toe gas pedal is cheap and one of my favorite mods. It doesn’t raise the pedal at all, but makes it wider so that it’s easier to blip the throttle when you press the brake.
+1 on this.

Remember, Heel-Toe does not literally mean heel and toe (for most cars). A little roll to the side works fine.
That's what I do as well.

When I tried doing it on the street I thought the brake pedal was to high as well. I found out that once you get on the track and actually push your brakes, they actually line up just fine. I just think it's hard to practice on the street because you're never on your brakes that hard like you are on the track.

Brembos are so grabby you only have to breathe on them to slow the car down. Went with a gas pedal spacer mod and pedals from Sullivan Racing Products.

Much improved.

The top two screws in the top row of holes lineup with the top "rib" from the factory dead pedal. It is noticeably wider and extends all the way to the floor making it look much bigger.

Any time I try to heel-toe, I nearly send myself through the windshield by applying too much brake pressure when trying to reach the accelerator pedal. Damn Brembos are touchy.
This made me laugh too hard because of how true it is
