I'm planning to upgrade my 2018 GT's 9 speaker system and just wanted some quick feedback:

Audiocontrol Lc7i with bass volume control
Alpine 5 channel amp
Alpine Type S lower door speakers and tweeters
Stealthbox JL subwoofer

The guy at the stereo store said I wouldn't need to do anything with Forscan becuase the LOC handles that. Is he correct? Would I be able to forego any use of Forscan?

In this setup, I would be using the amp for the 5 new speakers (2 alpine lower door, 2 alpine front pillar tweeters, JL sub). Would my center dash speaker and rear deck lid speakers then be disconnected? Would this impact functionality of anything like phone call audio or backup beeping audio?

Thanks!

Based on my experience, your center speakers and any others still connected to factory head unit will still operate, so yes, telephone, and navigation will go through center. This is a love hate relationship for me, adding all of these upgraded components, JL audio speakers and DSP amp, the factory head unit still controls overall volume, as the new amp is line controlled by the head unit. Set the new amp volume to a level that works, then adjust factory head unit volume as normal. But, phone calls and navigation blast louder this way, so it’s again, love hate relationship. Also, I need to ditch that damn fake exhaust sound, pitiful sounding after you add dynamat damping, way better speakers and amps, then you actually hear music, and that damn fake exhaust noise suddenly, becomes an irritant.

I don’t think my 2018 GT has the fake engine noise coming through the speakers. I thought that was the ecoboosts, gt350s, and maybe the bullitt.

Anyone else have thoughts on NOT using forscan or reprogramming the HU, and instead relying on the audiocontrol lc7i?

You don't have to use ForScan. My installer didn't as he measured the frequency response of my ACM and found that it had a slight bass boost programmed in and that already worked to his advantage as he didn't need to raise the volume about the same amount as he would've to if the slight boost wasn't there on the sub and mid bass to match the chosen target curve.
So, please first measure the frequency response that's coming out of the ACM in your car before you decide if you need something to deequalize the response or not, be it either ForScan or any electronic device. Most of the time if you have an unclipped signal with a slight boost in bass, you can use this to your advantage as in 99% of all car audio installs the bass will be boosted to match a target curve anyway.

What kind of setup did you do? Did you add an amp directly to the head unit?

Basically yes. My installer built a T-harness with the receptacles where the factory DSP plugs go in. So we are fetching the low-level signals from the ACM before they enter the stock DSP-amplifier and route them to the Mosconi Gladen D2 100.4 DSP amplifier which then does the crossover/time alignment and eq-thing for the Gladen Zero Pro 2-way speaker system up front and the JL sub in the trunk (which is fed by a Mosconi Gladen D2 500.1 amplifier which is connected to the processed line output of the D2 100.4 DSP).
