I took it off, I think it looks better with the "rats nest". But I also don't want heat being trapped underneath it in the molten summer temps.
Took mine off too. Less heat, better engine sound, less weight.

Not looking to win any car shows, but it's typical at car meets to pop the hood, even on a stocker.
Around here, only cars from before the 80s pop the hood, unless you have something really special. There was a Demon at a local meet last fall. He popped the hood because everyone was curious. But, it wasn't anything to look at, just a lot of plumbing.

Is there any potential danger in removing that plastic engine cover, for example exposing the underside of the engine hood to too much heat?

No, I don't think so. After all, Bullitts and Mach 1s come from the factory with no cover.

Do people really take these late model GTs to car shows and pop the hood?

That kind of surprises me as there really isn't anything there to show off, even under the hood. I've never been to a car show though, I thought they were to highlight unique or uncommon cars?
