another noob question... how does the flex tune perform if you add 100 or 103 octane gas? will adjust something? or will just work like a really really good 93 oct? lol

No it won't remap timing for 100+ octane gas. You need a tune for that.

That is not accurate unless the tuner has locked of the timing multiplier, which would be stupid, otherwise it should try to advance timing given the higher octane level based off of other variables. The ECUs in these are fairly advanced, especially in the 18+. If you want to understand it better read up on the ECUs in our cars and EFI Closed Loop operation.

What I'm getting at is there any need for a 93 tune as well as the flex tune?
You should not need a 93 octane tune as well as a Flex fuel tune.
