Currently lowered on Steeda Minimum drop lowering springs which are 0.5" drop in the front and back. My question is will I have any rubbing if I go with a 325/30/19 in the rear and 285/35/19 in the front. I drive a 2019 GT PP1. A buddy of mine says I'll be fine, just want to double check with anyone else running a similar setup.

Edit: Fronts are 19x10 35MM 5x114.3 70.6MM and rears are 19x11 50MM 5x114.3 70.6MM

You will be fine if you have standard 50MM/35mm offsets. I had this exact setup, but lowered .5" in rear, and 1.5" front. This pic is with the drop.

I have a 2019 GT PP with custom two piece forged wheels running 285/35/19 up front (19X10.5 5X114.3 30MM 70.5CB) and 325/30/19, (19X11.5 5X114.3 56MM 70.5CB Rear). My car isn't lowered but the clearance looks good. Good luck

As mentioned. It’s all in the offset whether or not something fits. In addition, the camber adjustment can tuck a wheel/tire combo in to avoid “poke” within reason.

Edited my post with the wheel sizing.

Great. The camber adjustment may need to be somewhat aggressive to tuck them in with +50mm offset. For Example, I run 0 camber in the rear with 305's on a 50mm offset and have a little poke. I do this to get the maximum contact patch for straight line acceleration and more even wear based on my power levels. Many run -1.5 to -2.0 camber in the rear to tuck tires which may be where you land. @LSchicago mentioned running a similar setup without issue (above).

Same size and offset as mine were. The rears will poke just slightly. This picture was at stock ride height.

I’m running the same. No issues at all. I’m on BMR drag springs

For OP's benefit, what camber % are you both running?

I have 325's on PP1 springs with no rubbing issues. I had 325's on a 2016 that was lowered by an inch, also without issues.

Why would you want 325s on a stock Mustang? That's way too much tire.

Honestly I like the poke. My current tire setup looks all sunken in to be honest..
