How do you determine if your Whipple is running too hot?
Head temps, coolant temp, something else?

What temp is consider running hot?

What symptoms/temps are you seeing?
It’s not running hot, but I would like to ditch the fans, trying to gauge what is too hot, so if I switch over to the oversized HE I want to monitor the temps.

Either tap into the IAT2 sensor for an external gauge, or install another IAT2 sensor in the intake manifold (post blower) and monitor the temps. There is no way I know of to monitor the temps with the sensor installed from Whipple.

Cylinder head temps for the engine, IAT2 for the blower itself (or at least as close as you can get).

Read IAT2 using any handheld device, and CHT is on the dash.
