Unopened Motul 600, Date Code 2012, still good?

Still has the foil seal, not sure why I didn't use this stuff in order. In any case, still safe to use? I have a track day coming up this weekend.

I'll take a stab since nobody has answered yet. I seem to recall Motul RBF 600 is good for about 2 years if the foil seal is still on the bottle. As you know, RBF 600 loves to suck up water. I used some bottles that were two years old at the track in an Audi S4 about 10 years ago and I had to change the fluid after 1 track day because the pedal was soft due to boiling the fluid (and the fluid was dark brown after 1 track day). I had 10 bottles left so I continued to use them and the fluid would always boil after 1 track day. I think the fluid boiled easy for me because it was 2 years old. I was also running a BBK and R compound tires on a heavy S4 but I also did so on that car in the past without issue. After that experience, I would toss my RBF 600 if it was more than a year old. Again, that was a heavy car with a BBK and R compound tires so your results may differ.

I've got some pretty old, maybe 18 months, RBF660 in my car that I picked up for cheap when I had my RS.

I have 2 track days on it and it's still keeping up but I'm on stock brakes/tires.

I wouldn't risk it. It's a plastic bottle and they "breathe" to some extent.

Brake fluid is hygroscopic (readily absorbs moisture) and if it's in a plastic container then it will definitely get contaminated with moisture.
