got most of the Steeda upgrades and just added new rims and tires. Steering wheels is a bit cocked.
Can a simple shop do all the required checks or is a dealer my best bet?
Last mod will be springs for a slight drop.

when are you doing the springs? if soon, and you are not going to drive too much then take it too a alignment shop. I would not recommend a dealership

You need an alignment, that's for sure. You'll need to do it again after you change the springs. Why didn't you do it all at once? The dealer can probably do a decent job but they may only align to factory specs, this may not be what you want. Most tire stores do the same thing, specs are often based on VIN number.
Find a shop that has a good reputation for alignment and suspension work. They don't need to be Mustang experts (it wouldn't hurt), just suspension experts.

Call the shop ahead of time to make sure they will match what specs you request instead of factory specs. I found a frame and alignment shop and had every mesurment front and rear that I wanted, including tolerances and had them set it that way. 200 bucks.

I’m not looking for anything specific, it’s just noted on all the documents for the Steeda parts that an alignment is required.
I’m assuming I just need the factory specs? This is my first modded suspension so I’m looking for guidance.
Thanks

Depends are you looking to track it at all (road course, autocross, etc...) or just normal street driving?

You'll want different alignment specs than a factory to take advantage of the upgraded suspension. Depends also on what kind of driving you plan to do. When you upgrade the suspension "just align it" or "everything in green" is not good enough anymore. You'll want a much tighter alignment and probably more negative camber.

Can you provide me with what this should be?

Search through posts from @BmacIL. I've seen him post alignment specs numerous times.

Add another degree (or more if you can) of front camber and 0.7 of rear camber. Otherwise pretty much the same. You may be inclined to go to a slight toe out (negative) for autocross, too.

I daily (9k miles per year) and auto cross as well about 8 events a year. My car just turned a year old and with a stock alignment the outside shoulder of all of my tires is gone. If you plan on doing auto x do not get a street alignment unless you want to buy tires every year.

Follow what BMAC said and up the camber to -2.5° front and -2° rear. I have not done it yet but will be once I get my suspension components and new tires later this year.
