Pages 89 & 90 are for the "Type 1" gauge cluster (the non-digital). The "Type 2" (all digital) gauge type settings start on page 94. I see no "Oil Temp" setting option under the Type 2 gauge.
Wow. That sucks.

That's the issue with the manual, from page 94 on where it describes the Type 2 Display, it never mentions available gauges again.
I assume the Fuel History graph was also removed from the LCD display.

Not having these features isn't the end of world, but it's confusing to see them cited in the manual. At least I now know my car isn't missing a feature it is supposed to have.

This forum is more helpful than Customer Service or the dealer.

How close is the Engine Oil Temp related to the Cylinder Head Temp and the Water Temp?

Here’s a pic I have to give you some reference. In regards to my IAT gauge, it reads IAT2 instead of IAT1 like most cars would but I am Lund tuned plus I’ve been idling quite some time before I shut the motor off.

My 18 non-digital gauge cluster show Oil Temp in the small LCD. However, it typically only displays the word 'Normal', no actual temp.

Once everything is up to temperature, they're around the same. But the oil takes a lot longer to get there than water temp, usually 2-3 times as long. You can be at normal operating temp. for water, 190ish, but the oil could still barely be over 100 degrees. Oil temp is what you want to pay attention to with regards to waiting until it's fully up to temp before driving hard.

Just another confirmation, my 2019 PP2 does not have the oil temp gauge either.

If you press "OK" when it's on the Oil Temp you should see a virtual gauge like below ... that's how the 2015-2017 works at least.

Yes, sure does. I thought I tested that to check for more detail. However, I just retested and you are exactly right. Thanks!

^^^ BTW ... that photo is of my GT at full operating temperature, and the oil temperature gauge needle is just to the left of center which is 200 F based on what each color zone represents (needle at the middle of the green zone is 210 F).

I then took an IR temperature gun and measured the black oil pan temperature and it was 199 F. So that tells me the virtual temperature gauge is pretty accurate.

My 2019 GT PP1 has it with the non digital gauges as well, pictured above. If it's not present then I'd say it may be a firmware bug and a trip to the dealer wouldn't hurt for a reflash. I just don't see why the digital dash, which is just a straight upgrade, would come with less options over the standard.

The lack of Oil Temp is a major disappointment! I want to discuss their ancestors sexual habits . . . .
The heated steering wheel is nice, but doesn't make up for it. I am using cyl head temp . . . whoever said that the oil temp lags behind water temp is spot on. Make sure everything is toasty before you mash the foot feed!

It's interesting how long it takes to come up. On my M235, operating temperature for the coolant is 220F, oil is 245F. The coolant reaches full temperature in about 5 miles / 8 minutes on my drive to work. The oil takes nearly 20 miles / 25 minutes before it does the same.

Here's a couple of data points I've recorded on my 2015 GT.

During warm-up
Cyl Head = 165F (on center display)
Oil Temp = 140F (just hits the green zone)

At full operating temperature (mellow driving)
Cyl Head = 200~205F
Oil Temp = 200F
