My gen 3 gt clutch is hydraulic so to bleed the clutch I just have press the clutch pedal up and down and so I don’t like how the clutch pedal goes up it’s too high and I want to get a clutch that will only make my clutch pedal go half way up only and so I want to see what clutch is that I don’t find it anywhere

Pretty sure you're stuck with it as it is. Unless you bought the car used and the previous owner installed a pedal pad extension which can be removed.

No such thing as changing the distance to half

I don't understand what the need or want would be to reduce the pedal distance? If you did, the total pedal distance would be where the bite point is.
Am I missing something with this kind of mod? I don't see much value here.

The mustang has a very high release point. With Stock and aftermarket clutches.
