If someone is going through the effort of swapping radiators anyway, doesn't it make sense to go even bigger to an aftermarket radiator that has even more capacity than the performance pack one?

You can put the biggest radiator in the car that will fit in the space but if you do not manage the air going through the front bumper and give it a place to exit it will make little difference to the final outcome. Larger radiators especially thicker units force the air to slow down even more, this in turns packs air in front of the radiator causing drag among other things. If there is an easier path for the air to go other than through the radiator it will take that path, if the air goes around the radiator it is not cooling the radiator. There are lots of trade offs when managing the cooling and airflow through or around the car. The cooling systems need to be enough to do the job but not so much as to add drag or lift to the front of the car. You will never over cool the car but you can limit its overall performance by increasing drag, its a balance.
