Alright well I installed this exact fan today and took the car out again. Same outcome. cylinder head temps got over 230 and coolant was around 220 all in a 15min drive and never going over 3500rpm or seeing any boost. also the outside air temp was only 95 degrees today which if 15 degrees cooler than last time i drove it.

the weird thing is the car runs and drives great. no symptoms of any engine damage at all. So i'm really at a loss at the moment.

Does anyone know if its possible to install the wrong head gasket or intall them incorrectly? that's the only thing I can think of right now
Did you wire the fan to run all the time? You should try it. Not as a solution but a test. If you wire it to run all the time and have no problem then it is in the tune. If you still have problems then we will have more information.
No the head gasket can not be installed incorrect or you will have oil leaking out like crazy and a gen1 can use gen1-2-3 gasket

I’m not gonna read all 16 pages but I’ll chime in with a suggestion if it hasn’t been mentioned.
Maybe try a rad flush with a rad cleaner. Maybe it’s clogged up somewhere. For a 2014, the antifreeze should be changed after the first 6 years, so should have been done last year or at 100k, whichever comes first. Antifreeze actually expires. An unsealed bottle is only good for 5 years. After that throw it out. I changed mine last year for my 2014 from orange to yellow which is the new orange.
It has a new radiator

Take pictures of everything even if you think it is not important. Maybe we missed something. Like the heater has to be plumed the right way. With one hose from each cylinder head. You can do away with some stuff but not others so maybe something is just not right. Also you could be collapsing the radiator hose

Okay, what about the other areas that the antifreeze runs through? It could be clogged elsewhere.
You mentioned the radiator so I was just informing you that the radiator is new and supposedly it has a fresh engine with forged rods and pistons. So it should have been all cleaned out but you never know.

The cleaners go by different names, rad flush, rad cleaner, coolant cleaner, etc. They clean the cooling system and not just the rad.

Not what I mean. When you take a engine apart you should have the block cleaned professionally. So there should be nothing in it but you never know if it was done correctly

if it gets hot without the thermostat then there’s a problem. I thought op said that it ran all winter just fine and only got hot now because of summer. If that’s the case then the cooling system is not keeping up. But if it gets hot no matter what you do and all you can do is slow down how fast it gets hot. Then there’s a problem with the engine. Put some blue devil in it and see if it goes away. Then you will know

yea I know it's an unusual issue. story of my life really.
And honestly i'm starting to question my sanity when it comes to this car. As far as I remember the car never got anywhere near this hot during the winter but maybe I'm wrong. It's hard for me to think it's a serious mechanical issue because the car runs great it just get's to hot. i'm not giving up on this thing but at the moment I don't know what my next step should be. It's very frustrating as you might imagine.

That's not funny but also hilarious. I've lost more 10mm sockets then I can count.
I’ve never lost any tools unless someone borrows one and doesn’t put it back where they got it from.

Is the coolant flowing normally? Does the coolant level stay the same in the degas bottle?

I might have missed it, but is the motor really getting hot? Have you used an IR temp gauge to measure temps on the motor itself? Trans too?

At this point I would just go do some full-send pulls and try to blow the damn thing up.

Flowing pretty normal as far as I can see. And the level stays the same yes
