Honestly I could drive to work every day in 2nd (79 MPH) and never shift. It wouldn't be comfortable, it would suck gas, it would be terrible for the car, and it would be loud as hell in a bad way, but the point is the 350 has enough power band that you're not working that hard for speed out of it.
At the GT350 track attack, I left it in third the whole time. I was just about to kiss the limiter on the straights when I hit the braking zone, but even if I found a little more exit speed right before them I'd still probably not be shifting, just let it hit red for a moment. When third gives you good power from ~60 MPH all the way up to 110 or so...
