GT is $1495 per day + 165 insurance + tax totaled $1892.18
Boss is 1895 per day did not ask about insurance or tax

I did the Boss day. The insurance was the same as the GT IIRC.

I went with a friend, who also bought a 350. We both went in 16 (for other cars) and went back again for 17 (no, don't ask). Had so much fun, we did the Boss again. As it turned out, we landed a 5.0 GT as our rental this year. No comparison on the cars (GT vs Boss vs 350 for that matter). I was TOTALLY surprised at the difference between the 3 versions. Never expected to get that comparo so vividly in a few days. Needless to say, that 5.0 was rode hard and put up wet.

I will say this, as an old lard ass. The full cage in the Boss is not for very large people (I was borderline) or those who are more than a little claustrophobic. However, if you want the "race car" option, this is your choice. Ultimately, that was my friends's perspective. "How often do you get the chance to drive someone else's full up race car. I can rent a GT whenever I want." YMMV

Apparently, the school now has a few R models. My wife's company supplies them with brake hardware and it was brought up that this was over and above the "regular" GT350 school cars. When asked to clarify the order she was told that...

We have (3) GT350R that we are working in as upgrade cars for this season...

It'll be interesting to see what they are working on, in addition to the brake hardware, to make the Rs school ready.

Kinda makes me want to trade in my "one and done" '16....

I'd love it if they'd make the GT350 available for "regular" classes. AFAIK, you can only get one for the Track Attack. Even then, it's for the first day only. If they'd offer the GT350 or GT350R for non Track Attack events, I'd be there in a flash.
