Looking for an S550 and have a question about options list. Is their any way to know the options the Mustang came with without the dealer invoice? I see cars for sale with options like PP gauge pack, digital dash, etc., but the rest of the car doesn't add up.

If it has a Carfax, they have been attaching the original window sticker to the report. There also used to be a few folks that could look up VIN’s and find the original factory options but I’m not sure if they’re still around or able to do that

A dealer may be able to get you the window sticker as well with the VIN.
You are right to be cautious though. Mustangs are often modified, sometimes heavily. It's not uncommon for brakes to be replaced with upgrades, exhausts, intake manifolds, fuel systems, digital dashes, PP guages, wheels, tunes, forrced induction, headers, seat swaps and deletes, audio systems, steering wheels, etc, etc, etc. And not to be left out Software modifications via Forscan.
I would highly suggest looking for a low mileage, stock, one owner car. Even if it takes longer or costs a bit more to find one.
Buying a used Mustang is not for the faint of heart.

I just went through all of that back in April. I was able to look up my original window sticker using the VIN as was mentioned.

Active exhaust was a required option for me and it was hard to tell with just looking at dealer ads.

If you do some searching on Google about window sticker look up by VIN you'll find some discussion about websites to use.

I was able to obtain mine that way but I also found that it can be hit or miss. Some of the cars I was looking at did not have a window sticker avail by VIN.

With high-res pictures you can make out most of the options equiped (or not).

With few exceptions, if a dealer doesn't offer or is willing to supply a Carfax, I won't buy from them. Autocheck is better than nothing, but is woefully short on service details compared to CF. And Carfax contains original Ford-supplied window stickers for all Fords from the last decade+. If it's a US S550 and you have a Carfax report, the window sticker is there 99.9% of the time (i've seen a handful missing out of HUINDREDS i've reviewed, but not sure why).
