They dyno'd it in 5th gear. 1:1 is 7th. That will throw off the numbers.

Yes I think it’s 480 and 486 with active exhaust.

What was the Mach 1

If I recall correctly, and I'm not saying for sure these are the numbers or not, however, I believe I remember seeing something like 429/439 hp and 390 ft/lbs or so of torque on the Mach 1 dyno's. I just don't remember who's car it was on the dyno and where.

"Gen 3" is the one with dual injection, right? Is 380 lb-ft on 87 octane?
351 lb-ft sounds really low for a car 4 years newer than mine, with a higher MSRP, that you probably can't get for MSRP.

My stock S550 recorded 419/418 on a DynoJet.
Edit: 2020 model, on 93 octane, close to sea level. I'm satisfied that it's consistent w 460hp & about 10% drivetrain loss. I see my graph has a correction factor of "STD smoothing: 5".
