I just purchased a new 2022 GT, and I find that with oil anything other than warm or hot, and at anything much above idle, the oil pressure gauge goes right to full scale (100 psi). Of course it moderates as the oil warms up, which seems to take longer than I am used to on my other vehicles including my former S550 with 3.7 V6. I find this somewhat concerning, but I suspect it may be normal and nothing to worry about?

Not 100% sure but I think the oil pressure displayed on the gauge is inferred.

Normal.. my aftermarket gauge shows the same readings.

One wire Sender just shows low or normal. 3 wire will show measured pressure. He has 3 wire if pressure measurement is shown.

Don't worry, it's completely normal.
For the temperature, the oil is hot when Cylinder Head Temperature is 90°C.
Engine Coolant Temperature is inferred and will shot as "hot" (in the middle of the left gauge) when CHT is at 84°C when thermostat opens.
The engine is at proper operating temperature, as well as it's oil, when CHT is at 90°C.

Also if you have the auto, wait to come out of the blue zone (less than 50°C).

Oil PSI will change or "peg" based on multiple conditions.

High oil psi upon initial startup is normal in every vehicle. The oil viscosity is thicker due to it sitting and dependent upon exterior seasonal temps (whether in a a garage or not). The colder the engine block, the thicker the oil will be, then as it warms up viscosity changes (thins out).

Oil PSI in ANY engine is always dependent upon operating temps, oil viscosity and RPM.

The oil psi specs below is for a bone stock S550 Coyote 5.0 right from Ford:

That PSI info is also based upon the standard recommended oil for the 5.0 Coyote.

IMO, Ford should have designed the oil psi gauge with better increments.

This is exactly why cars no longer have real, operation oil pressure gauges.
While it is plausible, I suspect was an inexpensive alternative to an accurate gauge. Cleveland and Windsor engines from days of yore would develop rod rap at idle and the idiot light would often flicker. The vehicle I just sold had a 400 and in addition to the idiot light I put a tee in and added a mechanical oil pressure gauge. The rebuilt engine might have had a few thousand miles on it and had 80psi on a cold start, 70 when warmed up in neutral, and 55 on a hot summer day idling in the 4th of July parade with Royal Purple. Very happy to have sold that machine. I enjoyed my time in old iron but will never go back.
The last of the parts, press, and diagnostic tools are leaving for a new home tonight.

Like others have said, it's normal. Search and you'll find a few threads with the same question/answer. Just a characteristic of the Gen 3 engine.

The oil pressure gauge is real, though heavily dampened like most modern gauges.

The oil temperature gauge a lot of us have swapped to from the GT350 (or the one built into the cluster) is indeed inferred.
