On start up pegs the gauge at 100 psi @ 1000 rpms. Drops after warm up.

Normal. Within a few mins you'll see it slowly creep down to 90 then slowly down to "normal", for me 60-80 during throttle and 20 or just a bit less at idle.

If you had the 150psi gauge from a GT350 or GT500 you'd see how high it really goes.

Not much over 100psi, and you'd get to see the pressure drop as the oil temperature gets up to normal of around 195deg.

I've noticed that right at 3k RPM's, mine jumps to 60psi+ and then settles back when below 3k RPM's.

But why? If the dealership put in the 5-30 synthetic blend why is the start up so high? Its the same weather is hot or cold here in SC. So the flow at low temp would not put the pressure so high? Perhaps something to do with the oil cooler?

While I am at it...What is the purpose of the Vacuum pressure gauge? why not another more useful gauge?

cool oil is thicker than hot oil. the pressure drops with the engine getting up to temp.
its always a good idea to take it easy till the engine oil (not coolant) gets up to temp for this reason.

Try to suck soda through a straw and then suck a milk shake. As the fluid warms, it loses viscosity and the result is less pressure in the system to move the same volume of fluid. The geroter oil pump essentially behaves like a positive displacement blower, for every rotation, it moves a certain amount of volume. When the fluid is thick and viscous, this creates much more fluid friction to pump it through the various lines, fittings, channels, etc.
