Lower temp contributes to much higher viscosity and higher pressures until the motor is able to warm the fluid, which in turn reduces the viscosity and thins the oil, dropping the pressure to normal range.
This is why most modern oiling systems have a bypass, so the motor is not starved of lubrication under cold startup conditions and the risk of bursting the filter.
