It looks like the variable feature can be turned off, and let the oil pump run wide open at all times as it does in Gen 1 and 2. Is there any drawback to doing this?
(Besides the .00001 mpg hit)

Huh ? ALL oil pumps are variable rate.

I believe he is referring to the sensor /actuator, whatever the technical name is that restricts oil psi at certain lower rpms . iirc under 2,000 on the gen 3's

Where/how is it turned off? I hate how low it goes when it is warm at idle.

In PCMTEC, there is auF60257. Selecting a 1 indicates the bleed off hardware is present. Selecting a 0 would allow full pump pressure at all times, like Gen 1 and 2. Just that I didn't see much info on it. I would not be happy to lose a motor because this thing bled off too much oil pressure.

IIRC the mach1 has variable oil pump switched off in the stock tune, meaning the valve stays closed.

I saw that recently somewhere about the Mach 1, and it had me wondering if it might not be a bad idea to turn it off.

That doesn't seem to be the case on my 2022 M1.
I just checked 3 different Mach1s in both hpt and pcmtech and all 3 have it turned off. Let me know your OSID or Strategy and I can look up yours.

Just FYI, the oil pressure will still fall at idle even with the bypass closed, but it falls a lot more with variable oil pressure.

I switched to 5W-50 today and the hot idle pressure is much better. The oil pressure still seems to increase exponentially in relation to RPM, but it isn't as dramatic as it was with 5W-30.

It’s the 6c880 part but I don’t think gen2 has it.
It doesn't, but my new short block is a Gen 3, but it looks like it came with an oil filter adapter that does not have provisions for that solenoid. I just wanted to make sure I wasn't missing something.

A good friend of mine works for Ford and was kind enough to get me a few diagrams. At least for the 2022 model year, the GT does still have the oil pressure control solenoid:

The Mach 1 does not:

Since the switch to 5W-50, my hot idle oil pressure is much better. Even with restrictors in the turbo oil supply lines, there was evidentially just enough additional flow demand on the pump at idle RPM to drive the pressure so low. Even a few hundred RPM made it rise rapidly, which is why I thought it had the variable system. The additional lines and cooler plumbing are probably why the solenoid wasn't included to begin with
