2016 GT - Water Temperature Suddenly Drops to Zero

Hi everyone!

New to the mustang6g forum and have been just laying low, looking around to get ideas on what I want to do to my mustang. I bought a 2016 mustang gt convertible last year and recently, the water temperature gauge will be operating normal driving around, but every once in awhile, the gauge will suddenly drop down to zero and the overheating warning will light up. The fans will kick in to try and keep the car cool, thinking that it is overheating, but I don't think so. I can shut the car off and let it sit for a few minutes, then fire it back up and the gauge is back to normal and the fans aren't kicking off.

I suspect it's a faulty sensor or maybe a short, but I can't find any information on this on the internet. I've searched this forum but haven't been able to find anything related to what I'm running into. So I have a few questions:

1. Has anyone ran into this and what was the issue and solution?
2. Where is the sensor located for the water temperature gauge? The best I can find on the internet is the cylinder head temperature sensor under the intake manifold embedded in the passenger side cylinder head, but not sure.

I went ahead and ordered a service manual off eBay, so waiting for that to come. Also, if I have to replace the cylinder head temperature sensor for this issue, I went ahead and ordered a 2018 1320 Junkie Performance ported intake to replace the stock manifold. Any help anyone can give me will be greatly appreciated. I am hoping to become more involved in this forum as I have all kinds of mods I plan for this car. Thanks in advance.
