I personally like the Goodyear SC3R 305/325 you are looking to run! They seem to be very consistent with laps with loads of grips! I did have to run more tire pressure than expected, 40/41 psi front and 36/37 psi rear Hot! I was also running -3 F/-1.6R camber for reference!
Are you trying to win the trackday? What do you need out of a track tire. “Best” is a loaded term. Best for the money? Best single lap? Most consistent (but not fastest)?
Most of the listed tires will be pretty great. Some may be a little faster than others etc, but none of those are going to be a bad time.
I bought a set of wheels 19x11 (305/325) that came with the Goodyear 3R. They had a Sebring trackday worth of wear when i got them, and I added two hours of track laps to them (high 80s ambient temp) . 1 day at Daytona and 1 day at Sebring. I love them (prior to that i was using Michelin PS4S). They still haven't worn down to the wear indicator. I think 2 or 3 more track days left in there. Running -2.5 camber upfront and-1.5 rear. I consider myself in a similar category of driving experience as you. I think they are great for heavy cars like the Mustang's. I plan on buying the same set after these wear out.
3R's are the fastest tire with tread.
The RE71's and the Hoosier TAP are more of a time attack tire....very fast but heat soak quickly.
The 3R's will sustain heat better during a session but they cycle out fast. Most people get 1-2 weekends out of a set.
I’ve done the older RE 71R and those are great but the weight and power of our cars grease up those tires pretty quickly.
I’ve done multiple seasons on cup twos ranging from the Ford Performance spec to the Porsche spec and they are a great tire, but where fast and fall off fast.
I currently have been running the Goodyear supercar 3R and I find that that is a far superior tire in almost all metrics.
All tires were 305/30/19 square.
Depending on how fast you are, you might get 1 to 2 Track days out of any of these sets
I've got Falken 660s on mine right now and had a blast this past weekend at Summit Point. They were brand new and I feel like they held up pretty well all weekend. I had my Time Trial checkride and passed so that's my experience level. I had Continental ECFs before and didn't really like them although there were 3 other 350s there this weekend with these and they love them. 2 were TT and one in HPDE2. I haven't tried them yet but based on what I've heard personally I agree that the SC3Rs seem to work great on our cars. I'd probably switch to that next.
I know when I was at Pitt Race last year the 350 that won the MAX3 class ran Vitours as well as the one that won Sport class so there's that.
