Went with a centri because my spirited driving is 95% canyons/twisties and I wanted the power up top.

I was in the same dilemma until I drove a 6 speed GT with a Wippel, I didn't like it...too hard to manage the imediate boost for my admittedly meager driving skills...so I went centi on my Bullitt, much "easier" to manage the power which is linear and comes in "softly" higher up in rev range...I run an ESS G3X with a G4 Intercooler, GT500 injectors and a 93 Wingard tune on a 120 pully...works real good with no issues.
I'm close to putting a refurb'd G3 on my '22 six speed. Would do basically the same as you here. No BAP needed?

Would like to stay on E85 for the improved torque down low from the advanced ignition timing. Don't want to do a full fuel system, though. Not looking for 850 whp. Also not really interested in the extra weight up front from a PD blower, or the PITA installation. I'd do it myself.

Pulleying down doesn't make much more boost "down low"
No it doesn't I agree, but there's plenty of ump for the everyday driver with a centi.

I plan to do a Centri (ESS G3x) when I do one. Simplicity, plus I want to keep my drivability like I have now. My car is pretty much perfect to me like it is. Just a little more oomph up top is all I want. Plus all the cool noises :) That is pretty cool. I drove an S650 with a Whipple a while back and it just blew the tires off effortlessly giving any throttle in second (MT82), I immediately went sideways and saw the car doing "Mustang" things and was like, oh no crowd killer mode :)

Choose your weapon carefully. There are multiple ways to get that bump in power (blower, turbo and last but not least, good ole nitrous). The only real problem with any of them is, we can never get enough.

I would prefer a 10,000 rpm 7.5L V-12 with 14:1 compression and keep it N/A on E85. Those are hard to come by.
