I'm running the LMR R350 staggered setup (19x10 F, 19x11 R). I have Firestone Firehawk Indy 500 tires in 285/35-19 F and 325/30-19 R. My car is lowered ~1.2" and NOTHING rubs. It all fits.

Some will say (and I agree) that the 325 tires on the 19x11s is a little excessive. The tires do not look pinched on the wheels. The sidewalls look nice and straight/flush with the wheels. No poke either. The reason I went with the 325s in the back was mostly aesthetic. I really like the look of them. 305's will likely do the same job, but I have to say "power on" rear grip is really good. with this setup.

Would a 275/40 be a better option for a stock height car. I do not plan on ever lowering it and the 275's are cheaper?

I had the same issue with Discount Tire. I have a 2016 GT on Steeda dual rate springs. Was running 20x9 AR924's with 275/35/20 General G-Max RS's on it. No issues there except I needed more grip when I put my Procharger on. I tried ordering the same wheels in 20 x 10.5 (45mm offset) and 305/35/20 tires for the rear. Their online algorithm said no. Went inside my local store and the rep said yes. I also scoured the forum here to verify others have fit this size. I have no issues with rubbing.

I have LMR's 19x10 SP2s all around, square. 275/35/19 on Ford's Track lowering suspension. Absolutely no rubbing or any adverse issues. I do plan on going 285/35 or maybe a 40 series.

I've had a couple people ask why one car may need speedometer corrections and another doesn't when they both have on the exact same model and size aftermarket wheels and tires. You have to take into consideration what size wheels and tires were on the car from the factory. PP cars have sizes that are already larger than the base, and thus their speedometers are already adjusted for those sizes, meaning they are likely to be closer in height with a given upsized aftermarket wheel/tire combo, than a base model might be. I am sure there may be other things that make a difference also.

305/35/20 is 28.4 tall. 275/40/19 is 27.66 tall. That's almost 3/4 inch taller.
According to this calculator your speed would be 1.7 mph off at 65 miles per hour.

I have not found that to be a problem...comparing speed to GPS, it is most always on the money...thanks for pointing that out as a point of accuracy. But but again not a big deal either way

What is the widest rear tire you can run without rubbing or a lot of poke? I would like to go with the 19x10 + 19x11 wheel combo with 285/305 or maybe 315 but since this is a purchase I cannot return, I don't want to get burned.

Opinions please! Facts are even better!

285/35 19 will not rub on the front...even with a lowered car.
305/35 19 will not rub on the rear....even with a lowered car.
I second this.

Check out my sig for the deets but I'm running a mild drop (0.5") and 19" rims with 305 in the back although I'm only running 275 in the front.

Aaarrg I got the wheels mounted but LMR sent me the wrong damn lug nuts. These need to be narrow because the factory lug nuts are too damn wide. What lug nuts are you running with your setup here?

285/35R19 is the appropriate size for 19x10 in the front and 305/35R19 or 315/30R19 or even 325 is the appropriate size for 19x11 in the rear. I have SVE SP2 with that fitment front and rear and I am lowered with ford performance lowering springs for magneride which is .78in drop and I have zero issues with rubbing all around and 285 fills the fender out perfectly and looks perfect on a 19x10.
