I have been having this sound for a long time and was wondering what it is.

notice the sound in the video , when the sound happens the boost gauge changes.

This happens when i turn on the heat or ac and the sound repeats every like 10 seconds

My first thought was the AC compressor cycling on/off. It fits the symptoms but it's really hard to tell from that clip.
Have you watched/listened to the engine with the hood up? Probably easier to localize it that way.

Cant tell from the video really but the repeated sound every 10 seconds sounds like AC compressor cycling to me as Dave says above ^.

Probably have the AC switch on when the heater is turned on which causes the compressor to run as well.

I bet if you turn off the AC button it wont do it.

If the climate control is in auto mode it can, and will, use the ac compressor whenever it thinks it needs the defroster. In fact, anytime you use the front defrost, manual or automatic, the ac compressor is used regardlessofthetemp setting. It blows dehumifid are on the windscreen to help clear moisture.

If it is the a/c compressor and it's cycling on and off every 10 seconds there's a good chance the the refrigerant is low. You may want to have that looked into.

Could just be the HVAC blend doors cycling too, if it’s most prominent while in the cabin. Just a thought 👍🏻

The pressure is not stable, what do you think?

I'm not the guy who could answer that. All I know is I had an F150 that needed to have the a/c recharged every 3 or 4 years and the tell tale sign was when the compressor was kicking on and off like that. If it's low you shouldn't be getting much cold air coming out of the vents inside the car.

The pressure will fluctuate a little bit. The thing is, that freebie guage isn't really worth much more than it cost.
But what concerns me more is the noise the clutch seems to be making. Then again, it's hard to tell in a video exactly where the noise is coming from. It could be a tensioner or pulley that doesn't like the extra load.
If it is the compressor/clutch you really need to hook a set of manifold guages to the car to look at both the high and low side.
At this point I'd suggest taking the car to a trusted mechanic and have them check the whole system. They can discharge and weigh the refrigerant in the car and, if nothing is wrong, recharge it with the correct amount of refrigerant.
I'll also add that if the compressor is trying to grenade you may be looking at a fairly expensive repair. That's because, for any new compressor warranty to be valid, they often require several parts of the system to be replaced. Parts like the condenser, expansion valve, flushing the evaporator, etc because of the possibility of shrapnel in the parts.
