I'm planning on getting either the EB or the GT eventually, and right now I am renting a 2015 V6 for a week while I'm on vacation. I haven't driven much at all yet but I can say the V6 definitely has plenty of power for me. Now I haven't driven the EB either but I am familiar with it enough to know that it has a very different powerband than the V6. In the V6 I basically have to keep it above 3 or 4K to really get the thrust out of it, while in the EB it's kind of the opposite, you want to keep it down low. So that right there is a major difference between the two in my mind, do you like to wring cars out to redline all the time? Get the V6. Do you want to be able to just put your foot into it at cruising speed without having to downshift? Get the EB.

And as many others have pointed out, you can probably get another 20% or more out of the EB with little effort.

EB definitely has the low end/medium torque. When I drove it and I drove the V6, the V6 felt sluggish in the low band and for a DD car, the EB definitely has it where it counts.

You kinda have to view it like this.

Mustang GT - Camaro/Challenger
Mustang EB - European Audi/BMW

Fast and Furious
Mustang GT - Vin Diesel
Mustang EB - Paul Walker

This is the first time I've ever heard anyone call the V6 sluggish. It's not that far off from the ecoboost I thought.

Not in the low band range. It doesn't get it's torque till the mid/higher rpms.

The EB has boost right away.

You could definitely feel the difference. I suggest taking both out. It's pretty obvious. Even the sales guy said the EB surprised him with how quick out of the gate it was vs the V6.

GT obviously other story.

If I was to get a GT, it would be kept stock. And I would run 87 in it because it would be a DD and on the weekend have a little fun but not much.

If I was to get a EB, I would definitely get the PP (because Europe is getting that one) and that makes me feel that Ford thinks the EB needs the PP over in Europe to give it that Eurocar feel. I'd also add the Touring Ford Racing exhaust.
I used to swear away from the PP because of the summer tires but I've warmed up to it and have seen the performance figures with the PP and its many benefits over stock. The EB is gonna be a premium with the PP or a base GT with the PP.

Yep I think the PP adds something to the car. All the reviews that have been in the EB with and without PP say it's a must have.
