Are your tires directional? If they've mounted them "incorrectly" that would cause issues.
The continentals I was trying to put on aren’t directional but they are asymmetrical

My '21 PP came with the setup you put on. Mine acts fine. Like others, I wonder if there's a difference in alignment specs between square and staggered.

I’m unsure of wheel width
It may be stamped or embossed on the wheels themselves.

If not, there is a way of measuring it without having to remove the tire(s) from the wheels. The 1-1/8" is the approximate thickness of the two wheel flanges, and could vary slightly with the wheel design. Tip the wheel upside down to verify both the 'B' and 'C' dimensions

If memory serves, Continentals were among the tires more sensitive to lateral tire flex. That sensitivity would be exaggerated by mounting them on wheels that are on the narrow side for the size installed.

Also, if they're stock Mustang wheels, then you could just take a picture and we'd be able to tell the width of them. I'm thinking that it's an issue of too wide a tire on a skinny wheel as Norm as suggested.

Yes, those are the "black accent package" wheels, which are 8.5" wide. They come standard with 255/40R19 tires, but you definitely don't want to put anything wider than that on them. A 275/40R19 tire on that wheel will do funny things. I think that's what the issue is.

Agreed, I have a those 275 tires on a 10" Wide wheel and they are just about right for the width.

Eventually I’ll get a set of track wheels to mount the 275s on, will I need to do any adjustments for the wider wheels for the sensors?

Did you have to do any adjustments switching to the 10” wheels?

None, I have 19x10 et 35 on All 4 corners with 275/40 conti.
Perfect setup, no issues with rubbing or handling.
Been running this on 2 s550's .

I changed from the stock frt&rr 235/50/18's to PP1 replica wheels 9.5x 19 and 9x19 using Mich PS4's 275x40-19 and 255x40-19 and have no issue's with tram-lining at all in fact the ride has improved greatly and traction is great. Also using 34lbs. at all corners.
