Are these wheels as concave as the p51 wheel? Can’t seem to find any good pictures to show if they are or no

If you don't track your car then I wouldn't worry. I've tracked my M600's with no problems but the design is slightly different then the P-51's (lip & concavity).
However I recently gone to a dedicated 19" track wheel to accommodate more selection in track rubber over the 20's.

would a gloss black finish with a diamond cut surface be considered a custom finish? Or a polished and clear coated finish? Third choice would be a bright silver powder coat.
