got most of the Steeda upgrades and just added new rims and tires. Steering wheels is a bit cocked.
Can a simple shop do all the required checks or is a dealer my best bet?
Last mod will be springs for a slight drop.

I just had this done myself. The steering wheel was slightly cocked and the car pulled left. The right rear toe was 0.32. It’s now 0.12 and no more pull.

Steering wheel right now? You get it aligned at dealer or specialty shop?

The steering wheel is centered now. I got it aligned at the dealer while they were doing some other work. The alignment was free. I only have 400 miles on the car.

So following this thread, specifically @BmacIL and going for the more aggressive offset suggestions I asked my alignment guy for this

Front
Camber: -2.5
Caster will end up around 7.0
Toe: 0.00-0.03 per side, 0.00 steer ahead

Rear
Camber: -2
Toe: 0.10-0.12 per side, 0.00 thrust angle

My alignment guy has set a few S550s for HDPE driving events and suggested we follow this but 0 out rear toe for tire wear. I'm bringing the car back in in about 500 miles to get an alignment check and I'm curious as to what y'all's opinion is on the rear toe. Will I benefit from having it increased to .1 or should I leave it where it sits now .01? Also, I'm still very new to this so any additional detail on how choosing one setup over the other will be better is greatly appreciated.

I'd strongly recommend against 0 rear toe, and would go with at least 0.1 deg per side. This is to aid in stability when putting power down, and ensuring that you always have some toe in (there's compliance in the tire, wheel, suspension, subframe). Toe in is stabilizing and this platform needs some for good corner exit. It'll result in a bit more tire wear but even for street use it's not adverse or significantly worse than the front.
