What does the number on the dash (K#) have to do with the V.I.N. Or what’s it represent?

The number isn't tied to the VIN in any particular way. The letter is tied to the year. K for 2019 and then L for 2020.

I believe the number is the chassis number in the order they came off the assembly line.

Its not really in order, thats kinda the issue. the VIN is in order so in theory they should match, but they dont.

Say on day 1 they made 50 cars. VIN 00001-00050, but ANY car got a random badge out of the box. So VIN 00001 may have gotten Badge K0045

VINs are NOT in order down the line.
They are assigned, scheduled and built based on lots of variables.

Chassis numbers for SE's are in order that they came down the line.
They are put on the car as it gets built. Its not tied to the VIN at all.
If they do happen to match, its just pure luck.

Ford uses single digit letter prefix to delineate any parts for that year, so that is what is used as the first digit for the plaques.

First Bullitt was K0001, First GT500 also K0001 of the 2019 model year.
Lxxxx for 2020
Mxxxx for 2021 (Mach1's etc)
Nxxxx for 2022
Pxxxx for 2023
