So…I picked up a used bullitt with 718 miles on it. Don’t kill me but I never noticed this til I got home, from a 700 mile drive that my coolant level was well below the minimum line. Is this something I should be really concerned with? I have to get the car registered/inspected in PA and I did, reluctantly, buy an extended warranty but it’s still bothersome. Or am I just freaking out?

This is very common. My car was under filled from the factory, don’t sweat it just top it off.

You’ll be fine. Fill it to where it should be and go enjoy your car.

Nothing to worry about. Top it off with some distilled water if you wish. Mine has been around that level for many thousands of miles.

Just top it off when cold with demineralized water

It's Ford Orange, but it's been replaced by Ford "Yellow" which actually looks neon green, lol. It's all a little confusing but you can safely mix the two. Nobody stocks or carries the Orange coolant anymore really. I still have a gallon tucked away but I switched my car to the Yellow a few years back.

Most (all?) Mustangs are underfilled from the factory. Nothing to worry about. Just top it up either with distilled water or (preferably) with yellow Motorcraft coolant. The orange one is discontinued, but the yellow is backwards-compatible.
Now, if you top it up and then it drops again, that would be reason to worry. But I bet that won't be the case.

One other tip too about the coolant reservoir cap:
Push down and twist simultaneously…. Many don’t realize that cap has to be removed in that manner, it’s not just a ”twist off”…. There’s quite a few threads of folks busting the reservoir cap trying to force a “twist off” without pushing it down first.
