I own a 2020 Explorer Limited and a 2017 Mustang Ecoboost. Booth have the 2.3L Ecoboost engine. The owners manual states the 2020 Explorer takes 5.2 quarts of oil with the oil filter change. The owners manual states the 2017 Mustang takes 5.7 quarts of oil with the oil filter change. Why the difference? Is the 2.3L Ecoboost in both vehicles the same?

Ford has an annoying habit of using one name for many different engines (and gearboxes, for that matter) only because they happen to be vaguely related to one another. Having direct injection and a turbocharger is all it takes for an engine to be called 'Ecoboost'.
I would trust the owner's manual.

My guess is the engines are indeed the same but the oil pans are different.

Oil pan size varies. My Ranger 2.3L Ecoboost take 6.2 qts.
