Then what's your recommendation?
My apologizes for any confusion - my intention with the broad statement was in the interest of gathering a bit more information before making a recommendation.

OP's mentioned of two separate tire/wheel combinations sounds like a good solution for his needs.

I am about to replace tires on my 2015 Mustang GT. I was wondering what are some good tires to put on the Performance Pack rims that grip really good on the street or unprepped track. Car does not get driven all the time. Drive to work once a week and on weekends mostly. If me and the wife take a trip we take the Mustang. Mod's to the car are 2018 GT Manifold, 2018 K&N Cold Air intake, 2.5 inch Borla Exhaust, Long Tube Headers. Car does a little bit of drag racing as well as a little bit of roll racing. Really don't want to end up looking like an idiot sliding into a tree or wall lol.
I would recommend some Mickey Thompson street comp tires. You can purchase them here at @LethalPerformance! Shoot me a message if you have any questions or would like to place an order. I'll get you taken care of!

Had a set of NT05R's. 100% garbage. Went with FIREHAWK INDY 500's. Awesome dry/wet traction. I'd say even better than The Mickey T's as well.
I went deep 11s on NT05Rs on my 14 GT so far from garbage and hooked plenty well on the street. You can't just hammer a drag radial without them being warm and expect it to hook up. I live in Texas so I don't have to worry about temps to often and I just restrain my foot when its wet out. The NT05R hook up better than any michelin, pirelli, good year or firehawk I have put on my car. The only other tire option I consider if you really want grip is the Mickey Thompson. I've been caught in the rain plenty of times with drag radials and have zeros problems just don't drive fast. I have the NT555 G2 on my car now and they are horrible.

Try it with an IRS rear. I stand by what I said.
I have them for my 16 GT as well just currently running NT555 G2 because my wife doesn't like the drag radials. 17 x 9 rims 275 tire and I have zero problems launching or traction on the street. Theres a reason people who street race run drag radials or slicks and plenty of them have IRS.

I think many people overlook these because they don't realize they are a different tire from the Mickey Thompson ET Street R tires. I have the Street Comps and have driven them in the rain and they performed well on dry and wet pavement.

Had them on my S550, drove them daily in rain and never had any traction issues. For sure a very overlooked performance tire for daily driven street use.

The Firehawks hooked up better than a drag radial? Or are you talking about the NT05? There's a difference between the NT05 and the NT05R...

I like the Nitto 555's as a good sticky tire yet good for occasional driving to work or play.

Yes Sir, talking about the NT05R
Great thanks! My car makes somewhere around mid 800's to the tires. Was thinking about going with a drag radial for my street wheels, but now that I know the Firehawks will hook up better than an actual drag radial, Ill go with those!!!

Haha you ain't gonna hook with 800 rwhp & any street tire.. that's a guarantee.
If the streets are warm, my drag wheels with Mickey Thompson ET Street R radials do pretty damn good and will sometimes mostly hook in 1st gear depending on what surface.

It's still extremely hard to believe your claim that the Firestones will out hook an NT05R drag radial...lol

Nobodies telling you to believe it. 800 rwhp ain't gonna hook. Period. Correction, maybe from a 60 / 70 / 80 mph roll. That's about it.
