Is there an oil filter sandwich adapter that will fit to install oil pressure and temp gauges?

Mishimoto males a sandwich plate with two ports you could use for exactly this.

Generally that is what theyre for, but if you cap off the inlet/outlet ports it should work fine for your purpose.

Do you have any clearance issues with the filter now?

I tried the Mishimoto and it will not work because there was not enough clearance with the oil filter.

I tried it on the KB car first and initially thought it was because the engine was lowered with mounts but it did not fit the Hellion car either .

I looked in to the MMR oil filter relocation kit(has 1/4 and 1/8 NPT fitting ) but ended using the one a glowfish adaptor with the glow shift gauages .

There was still not enough clearance so ended up removing the stock oil cooler (so far I have no issue with oil temp temps ).
