According to Crutchfield's fitment guide, the GB60s are 0.20" too deep for the factory door hole.

0.20" seems pretty small, so I'm wondering if there's a trivial piece of trim in that area that could be cut away to accommodate these speakers, and if so, would the factory speakers be able to be put back?

I installed a Hertz MPK165p.3 mid-bass, it's depth is 2.52". I mounted it on a 0.5" thick spacer ring. I think you will be ok with 2.75" depth. The window doesn't go down far enough to interfere.
Don't try to use the factory trim ring. It's too tall and your speaker will hit the door panel.

The Focal 6.5” from the K2 3-way set fits fine and it has a 3” mounting depth. The key is to source/make a thinner mounting adapter.
