I bought my '16 GT used with 2,000 miles on it and I now have about 5,200. There was a sticker from Ford in the window when I bought it saying that service was due at 5,220.
I checked the oil life gauge and it says 58%. The car is ProCharged and makes well over 700 rwhp. I'm wondering when I should change the oil and why the sticker from Ford says 5220 if the service interval is 10,000.

The service interval is NOT 10k miles. Rather, that's the MOST you should go between oil changes.

They probably put the sticker there so you would bring it back to them to change the oil.

With your engine making that much horse power. I would change half as frequent as ford normally recommend.
Oil is small cost compare to an engine issue.
3000 miles and full synthetic on a super or turbo charged engine is pretty normal.
My 2L WRX engine making 268hp asks for every 3000 mile oil change.
