Elec. fan turn on temp?

Was curious at what temp the fan kicks on, couldn't find a good answer. Asking because my Bullitt seems to run hotter than I would like. I'm in FL and seeing ECT's get up to 205 - 210 and CHT's up to 215. I hit these temps without A/C running and 80* ambient temps when idling at stop lights and slow traffic. At speed ECT will drop to 189 and CHT to 194. I even drained 1.5 gallons of coolant and replaced it with distilled water and 2 bottles of water wetter which didn't seem to make any difference. If the fan isn't turning on until 200 I'd like to change that to say, 185? I'm tuned with Lund, is this something they could adjust for me?

Stock GT starts ramping up at 200 F. At 212 they are running at 40% speed. They hit full speed at 223 deg coolant temp. This is very easy to manipulate by a tuner.

Stock thermostat is 180.

Stock GT starts ramping up at 200 F. At 212 they are running at 40% speed. They hit full speed at 223 deg coolant temp. This is very easy to manipulate by a tuner.

Stock thermostat is 180.
Do you think 40% at 200* and 100% at 212* would work well with the 180* tstat?

If I'm writing the tune, I'm turning them on full blast by 200 deg. I have mine going 100% at 190 FWIW.

Are you using the stock 180 stat?
My dumb @ss installed a “complimentary” 160 deg thermostat and gave the stock 180 to an f-150 owner. Once I started logging data I noticed that ECT’s were typically over 200, I tried lowering the fan setting, which helped none. I did notice that the ECT would come down rapidly if the engine speed was up and realized either a) the water pump wasn’t flowing enough at low rpm or b) the thermostat was causing too much restriction. It was basically cooling the water in the radiator down to ambient but the water wasn’t making its way into the engine. After doing some asking around I’ve ordered a reische 170 thermostat, hoping it perform as as good as stock.
