2021 GT wheel alignment

2021 GT
The car has 1200 miles on it. In the owner's manual it lists track and street camber specs for the front -1.5 and -1.03 degrees and for the back -1.5 and -1.5 degrees However these are for the Mach 1. Are the specs for the GT the same? My real question given these specs should I see a noticeable negative camber on the tires especially in the rear. Is this normal?

Your GT without camber plates will show more camber at the rear wheels than at the front. This is normal street alignment. The alignment evens works well for "beginner" track days.

If you push harder at the track, including if you have stickier tires, then you will need camber plates so that you can get to -1.5* or higher. I put J&M plates on my car recently. Right now I'm concerned about how much front toe changes with camber, but that's a different subject.

Agree

And not that much. I run 2.8 with only 0.04 degrees toe in with 295s on 18x11 fronts.

I don't understand your first question...
You are telling us that your 2021 GT owner's manual lists alignment specs for a Mach 1? That doesn't add up.
Whatever your owner's manual lists is the correct factory alignment for that car.
That being said, those are suggestions. You can align the car however you'd like.

For your second question: you're asking if you should be able to notice the camber? Is that correct? - Yes, you will be able to visually notice 1.5° of negative camber. And yes that in normal. Almost every modern car has negative rear camber nowadays because that is safer for the average driver.
....though I have a feeling I'm either not understanding your intended question correctly or the way you worded your question is not effectively getting your intent across.
